Tested by a True Vegan: Grace and Our Journey to Plant-Based Flavors How It All Began

Every restaurant has a story, and ours would not be complete without Grace. Grace was our very first server, full of energy, kindness, and laughter. But there was one thing that stood out during her shifts. When lunchtime came, she often sat quietly with her own meal while the rest of us shared dumplings and noodles from our kitchen. Grace is a true vegan, and at that time we did not have anything she could enjoy from our menu. Seeing her eat alone while dumplings and noodles were passed around the table did not feel right. Food, after all, is about bringing people together.

Creating Our First Vegan Recipes

That moment inspired us to make a change. We wanted Grace to enjoy the same flavors, textures, and experiences that make dumplings and noodles so special. Not just a substitute meal, but dishes she could be proud of. We began experimenting with vegan versions of our classics, starting with small tests in the kitchen. It was not easy at first. We tried different fillings, adjusted dough textures, swapped proteins, and balanced flavors over and over. For half a year, Grace became our most honest taste-tester. She tried every dumpling, every noodle, and every sauce, giving feedback only a true vegan could give. Slowly, those trials became recipes we were confident to share.

Our Signature Vegan Dishes

Out of that journey came the heart of our vegan menu. Today, you will find dishes like Chili The Tofu Lamen with its chewy hand-pulled noodles and bold flavor, Chili The Mock Duck Lamen for a rich savory kick, and Shiitake Vegan Buns that burst with earthy goodness. We also serve Bok Choy Mushroom Dumplings, Organic Vegan Dumplings, the crisp and light Tofu Pancake Roll, comforting Vegan Wonton in Chili Sauce, and refreshing Sweet Sour Cucumber. Each one reflects the care and creativity that started with Grace’s story.

Continuing to Innovate

Our vegan journey did not stop there. We continue to experiment with new flavors and combinations, often inspired by the fresh produce we find in local markets. Some of our creations include Tomato Egg Dumplings, Tofu Baby Dill Dumplings, Eggplant Brussels Sprout Dumplings, and Zucchini Dumplings. These dishes celebrate the wide range of vegetables available while keeping the bold, comforting taste that defines our food.
