From Beijing to Seattle: The Story Behind Dumpling The Noodle
“The Electrical Engineer with a Chef’s Certificate”
My original plan was to be an Electrical Engineer. In 2011, I was admitted to the University of Washington. With a half-year gap before leaving China, my parents worried I would not know how to cook or take care of myself abroad. Their solution was to send me to culinary school.
Tested by a True Vegan: Grace and Our Journey to Plant-Based Flavors How It All Began

Peking Duck has been enjoyed in Beijing for over 600 years, tracing its history back to the Ming dynasty. At that time, it was a delicacy prepared for emperors and their royal guests. Over the centuries, the dish spread beyond the palace walls, becoming the pride of Beijing cuisine. Known for its glossy, crisp skin and tender meat, Peking Duck is now celebrated around the world as one of China’s most iconic dishes.
