I grew up in Beijing, surrounded by the flavors of dumplings, noodles, and family meals that shaped who I am today.

My journey took me from engineering school to failed startups, late nights in shared kitchens, and finally to opening Dumpling The Noodle in Seattle.

Every dish we serve carries a piece of that story, filled with authentic recipes, persistence, and the taste of home.

Our vegan journey started with our very first server, Grace, a true vegan who inspired us to create dishes she could enjoy during her breaks. Every recipe has been tested and refined by Grace herself, so we know it stands up to real vegan standards. That’s why we are confident our vegan dumplings, noodles, and more carry the same heart and flavor as our traditional menu.
