Discover the Best Dumplings in Seattle at Dumpling The Noodle

Seattle has no shortage of dumplings, but finding the ones that truly taste like home is harder than it seems. At Dumpling The Noodle, we’ve built our reputation on authentic Northern-style dumplings: bold, handmade, and unforgettable.
A Different Kind of Dumpling in Seattle
When I opened Dumpling The Noodle in the winter of 2019, my goal was simple: bring the flavors I grew up with in Beijing to Seattle. Back then, I noticed many dumplings here leaned toward Southern-style, with more soup-based fillings. Delicious, yes, but different from what I knew.
In Northern China, dumplings are bigger, bolder, and packed with vegetables that balance the meat. That’s the style I missed most. So, just like I brought Chili Lamen to Seattle, I introduced Northern-style dumplings: dumplings that taste like the ones families in Beijing make together during the New Year.
Handmade, Bold, and Seasonal
Every dumpling we serve is handmade with fresh ingredients. Our fillings are generous and designed to stand out: from classics like Pork Chives Shrimp to seasonal favorites like Tomato Egg, Eggplant Brussels Sprouts, Pork Celery, and Zucchini Dumplings. Even our Beef Serrano Pepper Dumplings are customer-inspired, showing how much our community shapes our menu.
Seattle diners have embraced these flavors, and sometimes they even suggest what we should fold into our next batch. That’s the beauty of dumplings: they’re meant to evolve with the people who love them.

More Than a Dish, a Community
Dumpling The Noodle isn’t just about food, it’s about sharing culture. Dumplings are made to be eaten together, whether at a family table in Beijing or in a cozy corner of our Wallingford restaurant. That’s why they’ve become our most loved item: they bring people together.
